Delicious healthy meal!

Hi guys!


I have been home alone without my family for two days, and i decided to spoil miselves and cook a healthy good meal for myselves. These recipies are not all mine, but i read alot of them, and took a little from different sites. So this is kinda' my own i guess? I'm making Garlicmarinaded shrimps, baked beets and stuffed peppers.



So, for The shripms (the main part of the meal) you will need:
1 clove of garlic.
A quarter teaspon of chilli flakes.
90 g shrimps.
1/2 teaspon of oistersauce.



Let the frosen shrimp come to room temperature. You could leave them in the fridge, till they stop being frozen, but I diddent have patience enough to do that, so i popped them in the microwave for 20 seconds. After microwawing them, but them in the fridge. Press the garlic in a garlicpress, and mix the remaining ingrediens together in a bowl, with the garlic. Take the shrimps out of the fridge, and then, its time to get down and dirty with the marinade. Put the shrimps in the marinadebowl, and start rubbing them with the marinade. Put them back in the fridge to soak up all of the juices. Leave them in the fridge for 1 hour. Now is a great time to prepare the beets, and then the peppers. After the hour has passed, take them out, and put them on a spid. Grill them on a grill-pan, or a real grill for 2-3 minutes on each side, till they look done.


The peppers:
This will make a just enough cheese, because I'm not that crazy about eating cheese, so if you'll like to get the peppers all filled, you should probably double the recipe.

1 red pepper.
50 g. of cottagecheese.
1 small teaspon of oliveoil.
A little salt & pepper.
A little oliveoil for rubbing.
A few pines/ grated parmesan for decorating maybe.



But the cheese into a bowl. Mix it up with a spoon, so it is fully combined. But in the olive oil, and salt and pepper and mix again. Cut the peppers in half, (the way you like it) i cut them diagonal. Rub the peppers with some oliveoil. Fill the peppers with the cheese, and sprinkle them with some parmasan or some pines. Put a little bit of salt, and a little bit of pepper on top aswell. They are now done. Take out a grill pan, and let it get warm over medium heat. When the pan is hot enough, but them on and cook them untill they are a bit soft, and have the black stribes from the grill on them.


The beets

100 g of frozen beets.
1 teaspon of oliveoil
Salt
Pepper
Oregeno/Time



But the frozen beets into a ovenproof pan. Drizzle them with oliveoil, and top them with salt, pepper and oregeno or time (I used both). But them in the oven for 40 minutes, 200 degrees celcius.

Serve the meal on a nice plate, and make it look apetising.
